1) Ice machine has some buildup on chute, must empty, wash, rinse, sanitize and let air dry before refill. 2) Cutting boards have some dark areas and grooves that could trap food particles, resurface or replace. 3) Stand mixer bowl has some dried food particles on interior clean. 4) Ice bin in wait station has water line running thru back end to supply water faucet, shield the edible ice from this water line connection. 5) Invert ice scoop at wait station to allow scoop to drain.
- Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
Raw animal foods not adequately separated from precooked or ready-to-eat foods during storage-has raw pork loin stored over ready to eat items in walk in cooler, moved to lower rack now, must store according to cooking temp, will give handout. Corrected on site.
