  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Observation: Establishment was not keeping the original date that the package was opened with sliced deli meats. When package is opened and sliced that date must stay with the deli meat and be used within 7 days or discarded. Owner plans on dating cambro and keeping the deli meat in container.
  • Posting inspection reports
    Observation: Most recent inspection report must be posted in location readily viewed by the public. Post this inspection.
  • Drying mops
    Observation: Mop was siting in mop bucket at start of inspection. Mop must be air dried in between uses. CORRECTED.
  • Food storage - preventing contamination from the premises
    Observation: Truck had just made food delivery prior to start of inspection. All food and food items must be stored a minimum of 6" off the floor. Move boxes to shelving provided in walk-in cooler and freezer.

    Has run out of chlorine sanitizer test strips, has on back order. Correct concentration noted today, when tested.

    Has spray bottle of cleaner that is not labeled, must label with common name to identify contents. Will correct on site.

    Need to post signage at handsinks in kitchen area of when to wash hands.

    1) Baking pans are not being washed on a daily basis, must wash daily if used. 2) Has a case of single use cups on floor in dry storage area, must store all food service items at least 6 inches off floor. 3) Has ice bucket stored with pooling water in bottom, must store inverted to allow to drain when not in use.
  • Sanitization of food contact surfaces - before use and after cleaning
    Wiping bucket with no detectible chlorine, remade bucket now and is at 50 ppm, corrected on site.

    1) Has food plastic wrap box stored under the paper towel dispensor, relocate to an area away from chance of dripping handwater. 2) Has three boxes of breads with bags or lids open in the walk in freezer, close tops to protect. 3) Has cases of soda boxes on floor in dry storage area, must store all food at least 6 inches off floor.
