      1) The bottom area of chute of ice machine is getting some pinkish build-up. Need to clean. 2) The microwave above the chicken cooler has food debris build-up inside and needs to be cleaned. 3) The can opener blade needs more frequent cleaning.

      The floor tiles in main kitchen area have been removed due to the slippery nature of the tiles The floor is no longer smooth and easily cleanable. Owner plans to install new tile to the area in the next few months.

      Provide stem thermometer for kitchen staff and regularly verify proper cooking temperatures of meats.

      Ice scoop stored in direct contact with exterior of liquor bottles at time of inspection. Discontinue this practice. Store ice scoop in ice with handle protruding or store on a smooth, non-absorbant and easily cleanable surface that is cleaned daily. Provide plixi-glass collar for beverage lines in ice bin to provide separation between lines that are uncleanable and ice. Clean interior of ice machine per manufacturer recommendations. At a minimum remove all ice, clean all surfaces with a detergent solution, rinse with clean water, and sanitize all interior surfaces with a sanitizer solution. Be sure to also clean ice bin lid where hands commonly come in contact and drip lines on a regular basis. Clean cutting surface on can opener on a regular basis thoroughly.
