- Sanitization of food contact surfaces - before use and after cleaning
Observation: Quat sanitizer solution in the bucket on the prep line tested low, 0 ppm. Quat sanitizer in the spray bottles tested low, 50 ppm. PIC changed out all solution with the sanitizer dispenser at the three compartment sink. Wall dispenser unit by the mop sink is not mixing at the correct concentration of 200 ppm as listed on the spec sheet. PIC will only draw sanitizer from the unit at the three compartment sink until a service person checks the dispenser at the mop sink.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: Thermometers are not available in reach in coolers that do not have an external reading thermostat.
