2-401.11 Store personal drinks below and away from food, utensils, equipment, linens, and unwrapped single service/single use articles.// Several personal drinks were observed stored without lids on shelf in kitchen and WI cooler above food.// Staff discarded drinks.// EHS discussed proper ways to store personal items with staff.
3-501.16(A)(2) Maintain PHF at 41 F or below. PHF in cold holding unit > 41 F due to faulty equipment. Cease use of equipment until repaired and verified by JCDH.// Outside temperature gauge WI cooler is not reading correctly. (reading 30F) WI cooler ambient temperature and inside thermometer reading is 45F, 3 pack of hotdogs, 2 packs of deli turkey and 2 packs of deli ham and bacon were all 45F stored in cooler overnight. //PIC voluntarily discarded in dumpster.// Frozen chicken strips 32-35F were thawing in WI cooler, staff will relocate to another cooler to maintain proper temperature.
