3-501.15 Cease wrapping or covering food until cooled. Shredded chicken 57F covered in plastic wrap, cooling inside the RI cooler.
4-202.16 Replace damaged gasket on cooler door. Torn door gasket on the sandwich prep cooler, (fountain drink station).

Shredded chicken was shocked, using an ice bath, prior to placing inside the RI cooler. Discussed with the owner, continue shocking until product temperature is 41F or below.

4-601.11 Clean cartons that have been splashed.
