JCDH 2.2 Provide food safety training for all food handlers as required. Cards had expired.
3-501.16 Maintain potentially hazardous food at 135 F or above. Nacho cheese in warmer was 80 F. Cheese was removed and poured into shallow pans and placed in a walk in cooler.
2-103.11 Prohibit unauthorized persons from entering kitchen.
