On counter, package of raw bacon at 72F. PIC stated it had been out for maybe 30 min. Made on site quiche at 62F under heat lamp. Employee stated he had pulled it from the cooler maybe 30 to 60 minutes prior, for the lunch rush. (not COS, repeat)
- KDA_3_50118A1 - --In produce reach in cooler, container of cooked basmati rice with prep date of 12/2. Rice held over 7 days. COS discarded In walk in cooler, 3 bags of cooked duck dated with a prep date of 12/1. PIC stated it was prepped and pulled from the freezer on 12/1. COS discarded, repeat
- KDA_3_50118A2 - --In baking reach in cooler, opened gallon of milk without an open date on container. PIC stated the milk was opened the previous day at 9AM, over 24 hours prior. COS labeled, repeat
- KDA_4_60111A - --Stored as clean on magnetic strip in kitchen for clean knives, one knife with visible food debris on blade. Can opener stored as clean and out for use with visible food debris buildup on surface of blade. COS rewashed, repeat
- KDA_6_20215A3 - --Back exterior door to establishment has a quarter inch gap where the door meets the floor in the middle of the door.
- KDA_6_501111A - --10 fresh rodent droppings in nook off bar area where cold dessert case is located. 10 fresh droppings under prep table top in kitchen area. PIC stated they had caught a mouse that morning, and that pest control comes every 6 months.
- KDA_7_10211 - --In expo area, by an empty carafe, working spray bottle of yellow liquid with no label stating contents on bottle. PIC stated it was orange cleaner. COS labeled.
- KDA_Defacto - --Feta cheese on ice at 41F on cookline. In produce reach in cooler raw pork at 41F, cooked potatoes at 42F. container of mashed potatoes on counter at 39F. --White gravy at 135F, lamb at 151F, brown gravy at 161F, marinara at 147F
