KDA_3_50116A2 - --On the counter in a plastic bowl there was individual packets of cream cheese and butter at 68.4F and 70.5F. They were tempted around 9:40am and the cook said they were only out for 15-30 minutes. COS-placed back in a RIC. (Talked about putting the PHF on ice to help keep the product cold).
KDA_4_20211A2 - --On the clean dish side next to the cutting boards there was one rubber spatula with deep cracks on the food contact surface. In a utensil drawer (to the left of the handsink) there was one rubber spatula with deep cracks on the food contact surface. Not easy to clean and can hold bacteria. COS-discarded both. Also in the utensil drawer there was another rubber spatula with cracks on the edges. COS-set aside to be trimmed.
KDA_4_60111A - --In a cabinet to the right of the dish machine there were two plastic food grade containers, three (1/2) clear plastic food grade lids, two green square plastic food grade lids, three (1/3) rectangle plastic food grade lids, one (1/6) square plastic food grade lid, two white square plastic food grade lids and one (1/4) clear plastic rectangle food grade lid with stickers left on them and stored clean. This can hold bacteria after washing them. COS-moved to the ware wash area. In a utensil drawer to the left of the handsink there was one metal produce slicer with dried food debris on the blades and one black plastic 1/2 measuring cup with dried food debris on the inside and stored clean. COS-moved to the ware wash area.
KDA_4_90311B - --On a speed rack there were 8 metal sheet pans facing up and not covered.
KDA_5_20511B - --The designated handsink was being used as a dump sink (ice). COS-posted a handwashing sign to help designate it as a handwashing sink only.
