KDA_3_30212 - --There are unlabeled items next to the grill that the kitchen manager verified were salt, pepper, seasoning salt, and liquid butter. There is also an unlabeled squirt bottle of bbq sauce in the walk-in-cooler.
KDA_3_50118A2 - --There are containers of egg salad and tuna salad in the coolers in the kitchen (Pepsi Cooler, walk-in-cooler). The kitchen manager identified these as being made on site. She said they make them every Monday and throw any left overs away every Friday. These were made Monday (11/30/15) and are not dated. COS - made a recommendation that if they make one batch a week for this then they make a spread sheet of the items and put the date marking on the spread sheet posted by the main cooler or on the master container of the items. She is making a spread sheet to keep dates for these items listed.
KDA_3_50118A3 - --In the Delfield cooler near the stove there is soup dated 12/2 - 12/9, Cooked Beef dated 12/1 - 12/8, and Stew dated 12/2 - 12/9. COS - let the kitchen manager know that these are all dated for one day too many. She is correcting these dates back one day.
KDA_4_20211A2 - --There were two rubber spatulas hanging with other utensils that are chipping along the edges. COS - the kitchen manager discarded these. There are plates and bowls on a shelf next to the ice machine that are chipping along the corners and edges. Letting the kitchen manager know these need to be removed or discarded.
KDA_4_60111A - --The can opener has dried food debris on and around the blade. The kitchen manager said that the can opener had not been used today. Corrected on Site (COS) - the can opener was taken to ware washing. There is a container on top of the ice machine that was identified as a clean container. This container has sticker residue remaining on the outside of the container. COS - this was moved to ware washing.
KDA_4_90311A - --In the dry storage area there are boxes of trays and steam pans being stored directly on the floor.
KDA_4_90311B - --On the clean dish rack near the ware washing sink there are non-inverted and uncovered bunt pans, muffin pans, stainless steel bowls, and pots.
KDA_4_90312A - --There are bottles of syrups (caramel and chocolate) stored on a table directly below the wall mounted hand soap dispenser. This is at the hand sink in the baking area by the walk-ins.
KDA_7_10211 - --There is a bucket that was identified as quaternary ammonia sanitizer that is labeled "Kosher Dill Spears." Let the kitchen manager know that this needed to be labeled as a sanitizer.
KDA_7_20111A - --There is a box of sterno fuels directly next to a box of non-dairy creamers on the shelf near the register. Let the kitchen manager know this needed to be moved.

KDA_4_60111A - --REPEAT: There is a single pan on a shelf of clean dishes with a barcode sticker remaining on the outside of the pan. The sticker was identified as remaining from the original purchasing of the container. Corrected on Site (COS) - the kitchen manager moved this to the sink to be cleaned.
