KDA_4_60111A - --Mechanical ware wash - baking pans - plate temperature is 161.5 and a temperature of 165 is required for a heat sanitation. The switch for the on demand hot water supply was not on this morning the manager turned this on. Inspector notice the rinse cycle seemed to be short and rinse cycle was 4 seconds, the manufacturer data plate requires a 10 second rinse cycle. Corrected on site Manager will use the machine to clean dishes and use the 3 vat sink to sanitize the dishes until the ware wash machine is repaired.
KDA_5_20513 - --The dates on the canisters of the filters connected to the ice machine do not have a date as to when they were changed last. The manager had no knowledge of when the filters were last change and said maintenance takes care of them. Corrected on site manager contacted the maintenance personnel and he provided the information saying the filters had been changed this past summer. Educated maintenance that manager needs papers or knowledge of when the filters are changed.
KDA_5_20515B - --2 of the 3 faucets on the 3 vat sink has a continual water drip from the end of the faucets.
