  • KDA_4_20211A2 - --In the reach in cooler below make table #2 there was a plastic food grade container that had a broken edge and was being used to store ready to eat crab meat. COS-an employee placed the crab meat in a new clean container.
  • KDA_4_60111A - --On a shelf above the handsink in the ware wash area there were two (18 qt) and five (22 qt) plastic food grade containers with stickers left on them and stacked clean (can hold bacteria). COS-moved to the ware wash area and removed stickers. In the walk in cooler there were two (22 qt) plastic food grade containers with stickers left on the outside and was being used to store red salsa. There was one (18 qt) plastic food grade container with a sticker left on the outside and being used to store salsa verde. There was one (18 qt) plastic food grade container with a sticker left on the outside and being used to store guacamole. There was also one (18 qt) food grade container with a sticker left on the outside and being used to store red salsa. COS-pour items into clean containers and moved containers with the stickers to the ware wash area.
  • KDA_5_20515B - --The faucet handle to the handsink located in the food prep area is broken. The person in charge has the part and is going to fix it. The employees are utilizing the handsink in the ware wash area (convenient).
  • KDA_6_30112 - --There were no disposable paper towels at the handsink located in the ware wash area. COS-an employee placed paper towels in the dispenser.
  • KDA_7_10211 - --Below the mechanical dish machine there was a working spray bottle with a pale yellow liquid and not labeled. The person in charge said it was oven cleaner. COS-labeled bottle.
  • KDA_Defacto - --Make Table 1 red salsa 40.9F RIC (below MT 1) carnitos 39.9F Make Table 2 raw pork chorizo 40.4F RIC (below MT 2) raw chicken 39.9F Pepsi RIC vitamin d milk 31.2F Cold Tech RIF food frozen Kenmore RIF food frozen WIC guacamole (made on site) 41.0F chicken fajita mix 39.4F --The mechanical dish machine was not in use, utilizes chlorine for sanitization and measured at 25ppm. The person in charged primed the machine and now it is reading 100ppm.
