In the Samsung RIC there was a carton of raw hard shell eggs being stored directly above ready to eat cooked meatballs and a packaged of ready to eat flour tortillas. COS-rearranged items. KDA_3_30412B - --In the flour bin there were 2 metal pitchers with the handles in direct contact with the product. In the sugar bin there were 2 black plastic measuring cups with the handles in direct contact with the product. In the salt bin there was a measuring cup with the handle in direct contact with the product. COS-faced all handles upwards. KDA_3_30511A1 - --There were onions in a non-food grade plastic Sterilite tub being stored directly on the floor. COS-placed onions in a food grade container and removed them off of the floor. KDA_3_50118A1 - --In the Delfield RIC there was a plastic container of cottage cheese with a best buy date of 8/31/15 (past expiration date). COS-discarded. KDA_3_50118A2 - --In the Delfield RIC there was a plastic container with individually packaged salami, turkey and ham in ziplock bags without a date. The cook said she opened the packages on 8/31/15. COS-container was date marked. In the Samsung RIC there was ziplock bags of salami, turkey and ham without dates. The cook said they were opened on 8/31/15. COS-date marked all of the bags. KDA_4_10111A - --There were onions being stored directly in a non-food grade plastic Sterilite tub. In the Traulsen RIC there was pasta salad being stored directly in a non-food grade plastic Sterilite container. COS-placed both food items in food grade containers. KDA_4_20211A2 - --In a utensil holder on top of the counter there were 2 rubber spatulas with cracked edges and a deep crack on the food contact surface. COS-discarded. (Note: have new rubber spatulas). In a tub below the counter there was a round plastic lid and a square plastic lid with cracks on the edges. COS-discarded. KDA_4_60111A - --On a shelf below the counter there was a plastic bin of 1 blue square plastic lid, 3 clear square plastic lids and 4 green square plastic lids with stickers/residue left on them and stored clean (can hold bacteria). COS-moved to the ware wash area. The large mixer had dried food debris on the roof and the metal insert where the whisk inserts. It was not used today. COS-the cook cleaned it.
