KDA_3_50119A1a - --Facility started using time as a public health control for several foods such as cut melons starting from room temperature. Today there was cut cantaloupe and salad with cut lettuce. The written procedures posted lack a section about foods from room temperature, only having sections on foods held at 135 or above and foods held at 41 degrees or below. As per the person in charge, the salads were prepped and melons cut at 9:45 am. At 11:10 the cut cantaloupe was 46 degrees and at 11:13 am, the salad with cut lettuce was 45 degrees. As per the person in charge, the salads were prepped and melons cut at 9:45 am. At 11:10 the cut cantaloupe was 46 degrees and at 11:13 am, the salad with cut lettuce was 45 degrees. KDA_4_20211A2 - --A plastic food container lid (on a container of salt) was cracked. This can prevent proper cleaning and pieces of plastic can end up in foods (sent back to main kitchen to be switched to a new container). KDA_4_60111A - --A plastic food container holding sugar has a manufacturer's sticker on the outside of the container (sent back to main kitchen for cleaning). KDA_4_90411A - --Single use plastic spoons and forks for customer self service are stored in trays with the cutlery facing different directions, not all lip contact surfaces away from customers. KDA_6_50111 - --In the kitchen paint on the walls and ceiling is peeling. KDA_6_501111A - --Fresh rodent droppings: two on the floor just outside of the kitchen door in the southwest corner, in the serving area. Also, nine fresh rodent droppings on the floor behind a chest freezer that is directly next to the milk coolers. As per the person in charge, they have a hired pest control service, but she did not know what they do. Pest control method observed was sticky traps.
