Temperatures at the bottom were at or above holding requirements. Buffet line had been set up one hour before. Educated about possible smaller portions, waiting to set up line till closer to lunch and hoods over the food to preserve the ambient temperature. COS and served out.

Placed in Walk in cooler North and at 12:30PM was 61.2F. --WAIT STATION REACH IN COOLER: Milk - 34.6, Potato Salad - 34.9 SALAD BAR: Diced ham - 40.6, Crab salad - 39.9. KITCHEN REACH IN COOLER NORTH: Bagged salad - 41.2 KITCHEN REACH IN COOLER SOUTH: Hamburger patty - 38.6, Sliced tomato - 39.2.
