Person in charge said all foods were placed in cooler 2 hours ago at shift change. PIC chose to move all foods to walk in cooler except fish, lobster, and chicken which was disposed of in trash. The following foods were in cold table on North side of kitchen counter: cut tomatoes 46, cheese 52, and cut lettuce 50. Person in charge said foods were placed there 2 hours ago. They were on ice but during inspection all the ice was melted. (corrected on site-all foods were placed on ice for quick cooling) The following foods were in front shift cooler: butter 46 and cheese 56. Person in charge said foods were moved into cooler 3 hours ago. (corrected on site-foods moved to walk in cooler for proper cooling)

- KDA_4_30111 - --South make table/reach in cooler had an ambient temperature of 44.6. Front shift reach in cooler had an ambient temperature of 43.5. Both coolers cannot be used to store potentially hazardous foods until they can maintain food temperatures of 41 or below.
