- KDA_3_50113A - --On the bottom shelf of a wire rack cart, 4 packages of shrimp (still frozen), Chorizo (still partially frozen), and raw beef steak (43.6F) were laid there to thaw per the manager. COS: Employee placed the items in the walk in cooler and inspector educated about proper thawing using refrigeration.
- KDA_3_50116A2 - --In the south make table, cooked pablano peppers (48.7F) and salsa (49.3F) were not maintained at 41F or below. The manager said they may have been setting out during lunch, but not more than a 2 hours. COS: Left in the cooler to cool to 41F or below. Ambient air was 38.3F. FIELD WARNING LETTER ISSUED.
- KDA_4_10111E - --The shelving in the Turbo Air 2-door cooler in the kitchen is cracked and chipping. The manager said he will get new shelves ordered for it.
- KDA_4_60111A - --On the clean dish storage shelving, 5 metal pans had food debris on the inside of the container. COS: The manager moved them to the warewasher.
- KDA_6_30111 - --There was no soap at the bar hand sink. Corrected on site (COS): The manager provided soap.
- KDA_6_30112 - --There were no towels at the bar hand sink. COS: The manager provided towels.
- KDA_Defacto - --Chicken: 182.4F --In the walk in cooler, shredded chicken (69.7F), chicken (70.6F), Beef (71.6), and Refried Beans (59.3F/60.1F) were cooling since 1:30pm per manager (less than 2 hours).
