Foods have 2 hours to reach 70 and then 4 more hours to reach 41. The container of rice was moved to freezer for quick cooling. --chest freezer-all frozen walk in cooler-pico de gallo 38, beans 39, carne 38 West make table-tamale 41, cut lettuce 41, guacamole 42 Front Hobart reach in cooler-salsa 41 East make table-tilapia 42, raw chicken 43, tomatoes 44, raw beef 45 (East make table was going through defrost cycle and 30 minutes later the tomatoes were 41 and raw beef was 42. The make table had an ambient of 35.2.) --Dishwasher had a reading of 100 ppm chlorine. Establishment uses chlorine as sanitizer and has chlorine test strips. --Establishment gets monthly pest control treatments from Patton Termite and Pest control. The last treatment was on 10/7/15.
