KDA_3_50116A2 - --25 pork rolls with a temperature of 77 were stored on table next to cash registers. Manager said they were placed there to cool down one hour ago. (corrected on site-educated manager on proper ways to cool and pork rolls were moved to reach in cooler for proper cooling and holding) A package of cooked livers with a temperature of 66 and 2 packages of fish cakes with a temperature of 60 were stored on table next to cash register. Manager said they were removed from coolers and placed on table 1.5 hours ago. (corrected on site-foods moved to reach in cooler for proper cold holding) Inspector recommended considering using time as temperature control for potentially hazardous foods kept at room temperature. They would have to be marked with time and then disposed of after 4 hours. 15 bags of bean sprouts stored in West reach in cooler had temperatures of 46.5-50.9. Manager said they were stocked two hours ago. All other foods in cooler were produce or shelf-stable foods. (corrected on site-bean sprouts moved to a different reach in cooler for quick cooling)
