KDA_4_60111A - --The salt and the cornstarch is stored in green buckets that were originally storing pickles. The stickers labeling the buckets are still on the outside of the buckets. The buckets were washed prior to being used for salt and cornstarch. Corrected of Site (COS) - The kitchen manager is having the stickers removed from these buckets.
KDA_6_20215A3 - --The are double doors in the dining area that have 1/4 to 1/2 inch gaps at the bottom where sunlight can be seen shining through while the doors are closed.
KDA_6_30112 - --There are no paper towels at the hand sink in the dish washing area. COS - the kitchen manager had this supplied.
KDA_Defacto - --Hot water dishwasher - 163.0 F --Milk Delivery - 40.3 F --Note - the white plastic containers originally storing sour cream, strawberries, and other items that are being reused to store items (such as yeast, etc) are not recommended to be reused as the break down and deteriorate more quickly. --Quaternary ammonia test strips were available in the kitchen. --The spray head at the garbage disposal in the ware washing area is hanging down close to the flood rim of the sink. Letting the food service director for the district know that this spring is allowing this to hang down to the point that it's nearing being too close to the sink to allow the required air gap. --Victory Hot Case: Beef with Noodles - 166.4 F Victory Hot Case 2: Mashed Potatoes - 156.2 F --Walk-in-Cooler: Chopped Lettuce - 36.4 F Randall Cooler: Milk - 42.7 F True Cooler: Salad - 51.4 F (Note, the salads were prepared this morning and put in the cooler within the past 30 minutes to cool) Milk Cooler: Milk - 40.1 F Milk Cooler 2: Milk - 36.1 F --Wiping cloths are stored in 400ppm quaternary ammonia.
