02/21/2014 | Inspection | Measured the temperatures of the following trays of food in the refrigerator compartment of the GE refrigerator/freezer (degrees F) at 3:44PM: Chicken & Peppers - 69; Tomatoes & Beans - 68; Sour Cream - 51. Discussed these findings with the operator and he stated that these items were placed in the refrigerator about 1/2 hour previously. These items were made in the Cafeteria at Windham Mountain and brought over to this site next door to Windham. These items were served at 2PM today so they were already below the critical temperature of 70 degrees. Mentioned that they have 4 hours to cool the items to 45 degrees F or less and that they needed to remove the plastic wrap covering the trays so that they could cool faster. This food was served over a period of 1 hour according to the manager. According the manager, they cook hamburgers and hotdogs on the grills outside in both the summer and winter. Found frozen hamburger patties and chicken breasts in the chest freezer and frozen cookie dough in two boxes in the freezer compartment in the GE refrigerator/freezer. A number of boxes of pasta were stored in one of the wooden cabinets above the microwave. The manager also mentioned that they take the developmentally disabled children on trips to the ski area next door at Windham, as well as on bicycling trips, canoeing and rafting in the summer. He did not mention that the parents accompanied the children on these trips. Report emailed. |
