04/29/2015 | Inspection | All violations from the previous inspection were corrected, including the installation of a mop sink, installation of an air gap on the 3-bay sink, purchasing a new ice scoop with ice scoop holder, and the replacement of the door gaskets on the large deli style cooler. Cooling logs were also discussed with the head chef. He showed the inspector previous cooling logs from the winter. It was agreed that cooling logs would be recorded a few times per month. The hot water dishwasher was observed reaching temperatures of 190 degrees F. Temperatures measured with a DOH thermocouple included: chicken and rice soup hold held at 174 degrees F, heavy cream cold held in the large deli style cooler at 41 degrees F, baked potatoes cold held in the walk-in cooler at 37 degrees F. |
