01/04/2006 | Inspection | 5a-A large pan of spaghetti was in the hot holding box in the elementary cafeteria at a temperature of 131° Fahrenheit. The spaghetti had been placed in the hot box at approximately 11:00 am. During the inspection it was noted the hot boxes do not appear to seal adequately between the upper and lower doors. It was also noted the spaghetti was not covered and there were additional sheet pans in the unit, both of which may have contributed to inadequate hot holding temperature. |
