- Plumbing and sinks not properly sized, installed, maintained; equipment and floors not properly drained

10/01/2015 | Inspection | Proper cooling is observed with chill wands. All hot & cold food temperatures measured with a metal stem food probe thermocouple thermometer are 140 degrees F or above, and 45 degrees F or below respectively. The operator's 0-220 degree F metal stem probe measures accurate when tested in a 32 degree F ice water bath, but it's highly recommended that at least one thermocouple thermometer be obtained for this busy operation for better efficiency and accuracy. Please email my address on this report the plan for corrective actions of the violations, thank you. |
- Insects, rodents present
- Non-food contact surfaces and equipment are improperly designed, constructed, installed, maintained (equipment not readily accessible for cleaning, surface not smooth finish)
