Observed cook, Reed, use thermometer to measure hamburger after removing from grill (ordered well done) - temperature measured to be 200 dF -ok. Observed Reed using gloves when preparing ready to eat foods. Observed proper wash, rinse and then sanitize three step method in use for washing dishes - ok. Discussed reheating and cooling procedures with cook and operator's husband. Overall, kitchen observed to be kept well cleaned. No hot-holding. Cold-hold: pulled pork 38 dF. Discussed outdoor smoker, which is used every other day per operator's husband, and food protection during use - ok. Smoker not in use atoi. |
