Chlorine test strips not available to evaluate sanitizing solution ( education provided to operator on requirement to have and proper use of test strips). Hot holding: marinara sauce - 148 degrees F, meat marinara sauce - 139 degrees F (observed operator voluntarily increase heat of hot holding unit to maintain minimum temp of 140 degrees F). Observed 7 Strombolis and 2 Jamaican beef patties properly stored in cold-holding display case at 35 degrees F (45 degrees or less required), and half of one plain pizza pie left at room temp on display.
