3A Operator/owner noted on site near kitchen area. Stated he had been ill in morning with severe headache and felt nauseated.Insztructed that he should not be operating facility while experiencing illness. He had opened ~ 11:15am. Stated he was leaving and is looking for replacement staff for evening.
5A Provolone cheese in cooler noted at 56 degrees F. in cooler at time of inspection. Per owner, had been in use/out of cooler 1/2 hour prior to inspection. Instructed to retain in alternate cooler until temperature less than 45 degrees F. and to utilize alternative supply |
