09/23/2015 | Inspection | Operator indicates he has made some progress in correcting previous violations, but he was informed that since they have not all been abated they remain as repeat violations. All violations remain from 3/6/15 except for Violation number 15D.He indicates that he is currently not conducting a retail business and currently only makes breads and non-hazardous baked goods like chocolate cookies and molasses cookies. He indicates that he should be able to correct all deficiencies in the Prep room and Kitchen by December 2015, and all violations by 3/31/16. He indicates that he wishes to open for retail business by 4/1/16, and that he would be ready for preoperational inspection by late March 2016. Mr. Tanguy had been advised beforehand to call the office on 9/14/15 to keep both previous inspector and Director apprised of his efforts, but Mr. Tanguy said today he never got to perform this action. He was again advised today to call, and indicated he would do this next week. Only eggs, butter, flour and sugar were available on premises at time of inspection, so no food temperature monitoring was performed. |
