Open-top food prep cooler (upper compartment) food temperatures: coleslaw 40 dF, tuna salad 38, sausage 42 dF, caramelized onions 41 dF, sliced tomatoes 41, potato salad 42 dF and honey mustard dressing 44 dF (all five open-top coolers holding properly). Per cook, Danny, soup kettle for onion soup did not appear to be working properly and soup was transferred into a different kettle after properly reheating. Discussed cooling procedures with kitchen manager/cook, Sebastian - ok.

Hot-held items: french onion soup 180 dF, marinara sauce 148 dF, alfredo sauce 168 dF, gravy 168, butternut squash soup 164 dF and chicken noodle soup 170 dF. Cold-held foods: sliced cooked sausage 45 dF (open top food prep cooler), cocktail sauce 41 dF, tartar sauce 40 dF, coleslaw 45 dF, salad dressing 45 dF. Discussed hand-washing between changing gloves. Discussed that all pre-made and cooled soups are first reheated on stove top to at least 165 dF prior to placing under hot-holding. Discussed cooling procedures for all cooked and cooled items, and discussed (and observed) that roasts (greater than 6 pounds) are properly divided after cooking to allow for adequate cooling. Discussed that chicken wings are cooked completely (during initial cooking period) prior to cooling, as opposed to par cooking, for later use - ok.
