01/26/2016 | Inspection | Discussed deficiencies with the operator. The temperature of sliced turkey breast in the Four Door Traulsen Reach-In Cooler was measured to be less than 39 degrees F. The Final Rinse on the Mechanical Dish Washer was 190 to 191 degrees F and the Fire Suppression System on the Ventilation Hood was inspected in August 2015. Temperatures of the. other refrigeration unit were around 36 degrees F. Chlorine residual measured at the Kitchen Hand Washing Sink. was 0.6 ppm. Report e-mailed. |

On service line macaroni and cheese is at 166 F, and chicken salad dish is at 55 F. Chicken salad has been out of refrigeration for about 20 minutes and will be served within two hours.
