Hot TCS food (soup) delivered in an insulated thermos Cold TCS foods delivered in aluminum pan and a plastic bag sitting in a plastic bread tray with no ice/cold pack. Soup 159 F, Deli Turkey 42F, cut up cantaloupe 42 F, Milk 42 F. Sarkis delivery staff stated she did have the turkey, cheese, milk and melon stacked on plastic bread trays stored with ice prior to this delivery which was about 15 minutes ago. Ice was given to the previous location and she continued her delivery without these products on ice. Discussed proper cold and hot storage/delivery of TCS foods to maintain them at or below 45 F or at or above 140 F. Daycare director will contact Sarkis to discuss expectations for proper hot and cold holding of all TCS foods during transport and delivery.
No violation noted during this evaluation. 01/28/2016Re-InspectionAll violations corrected. Fish Stick hot holding in oven 158F. Facility will start using Sarkis catering for lunch on 2/1/2016. Reviewed hot and cold holding and temperature monitoring with Day Care Director who agreed to temp food upon receipt and during hot and cold hollding prior to service. Re-inspection in next month after catering service begins.
