All lunches and dinners served to the workers are cooked, placed in insulated boxes (coolers), delivered to workers in the field and immediately served with no leftovers brought back to kitchen. Inspection involved verifying accuracy of food probe thermometer, proper sanitizer concentration, hand washing and dishwashing facilities. Despite preparation of a meal for 60 men was just wrapping up, kitchening was relativily clean and organized. |
