These include improper cold holding; use food probe thermometer; lack of screen door to the outdoors; fully equipped hand wash station at the bar. Facility does not prepare large volumes of food that require cooling. Inspector suggested manager provide something in writting that describes the preparation process of typical menu food items served, as well as, the most complex menu items served for risk reassessment from high to medium risk. Through inspections the last several years and discussion, the menu served is primarily cook and serve. |
