10/28/2015InspectionViolations to be corrected by 11/11/15. Please send email correspondence to this office with a corrective action list taken for each cited violation. Any questions can be directed to this office via email or telephone. Discussed barehand contact prevention with ready to eat foods, hot/cold holding, and adequate cooling and reheating of potentially hazardous food items. Note: Currently in main kitchen there is only one 2 bay sink present for food and hand washing. Foods are washed in one bay and hands in the other. According to staff no dish ware is washed in this sink.

11/07/2014InspectionMany hot and cold internal food temperatures were measured on the line and in the walk-in cooler with a metal stem probe thermocouple thermometer. All temperatures were acceptable. Proper cooling of a few foods was observed in the walk-in cooler. A thermocouple thermometer is recommended for this volume operation for more efficient & quicker results of internal food temperatures. A compliance schedule of prior to July 2015 was discussed with the Manager Jaime Diaz for the proper installation of the additional sinks.
