 02/17/2016Re-InspectionREINSPECTION SHOWED ALL NOTED VIOLATIONS FROM REPORT DATED 2/3/206 WERE FOUND CORRECTED EXCEPT FOR THE ABOVE LISTED VIOLATIONS. OPERATOR HAS ORDERED A NEW DISH MACHINE WHICH IS DUE TO BE INSTALLED BY THE END OF THE WEEK. CONTRACTOR HAS ALSO BEEN HIRED TO REPAIR WALK-IN TILE FLOORING. OBSERVED NO MOUSE DROPPINGS DURING REINSPECTION. PROOF OF MONTHLY EXTERMINATION PROVIDED DURING INSPECTION. TICKET #5840 ISSUED WITH A WAIVER GRANTED TO OPERATOR FOR RODENT DROPPINGS (MICE) OPSERVED IN FOOD PREP.AREAS ON 2/3/2016 INSPECTION. REINSPECTION IN ONE WEEK TO CHECK ON ABOVE REMAINING VIOLATIONS.

DISCUSSED WITH OWNERS REGARDING THE PRACTICE OF TABLESIDE PEPERATION OF COOKING PASTA IN A WHEEL OF PARMIGIANO REGGIANO. SAME WAS INSTRUCTED TO CEASE THIS PRATICE. NOT PERMITTED BY THE NYS SANITARY CODE PART 14-1 OWNER AGREED TO CEASE THIS PRACTICE. DISCUSSED THE USE OF THE CHEESE WHEEL FOR PARTY USE ONLY. THIS PRACTICE WILL BE PERMITTED. THE CHEESE WHEEL WILL HAVE TO BE DISCARRED AFTER THE PARTY. ONE (1) TIME USE ONLY PERMITTED.
