Also recommend stem probe thermometer be placed in food items in tops of coolers and dish washer log be maintained.

Per interview, The pork was prepared at the LP Pub and Brewery, cooled using proper methods and reheated to 165 df, prior to being placed in hot holding units at the LPCA. The temperature of the pork was greater than 140 degrees F. No violations were noted.
