Glove/Utensil Use: must be worn/ used with all ready to eat foods (foods that will not receive heat treatment before being consumed).
Hot holding @ or above 140 DF

Storage of utensils- utensils stored in food items during times of high use must be washed throughout the day
Rotation of stock- cheeses are rotated by a ""top off method"" (once the top comes off a box of cheese it is used strictly for making pizza- does not require gloves)- if a box of grated cheese has a lid on it the contents must be handled with gloves and returned to the cooler with a lid. At the time of inspection a bowl used for weighing cheese for pizza application was found stored in an open bin of cheese, review of the process was done with the staff and this method will only be accepted if the previously stated cheese storage and rotation methods are upheld. |
