Observed residential dishwasher, which operator stated is connected to a booster pump that allows the wash and rinse cycles to reach at least 180 dF. Discussed reheating procedures with operator's wife, who was in the process of reheating tomato meat sauce (cooked and cooled,stored in freezer) - sauce is stated as being cooked to at least 165 dF, if not 180 dF. Observed digital stem-type thermometer. |
