10/16/2015Re-InspectionInspection was performed due to failure of refrigeration unit cited at previous inspection. Temperatures of raw stuffed clams were 42F on the top of the unit and stuffed shrimp were measured, on the bottom at 39 F. Temperatures taken in other refrigeration are found to be acceptable. Temperatures taken at buffet include: stuffed shrimp 160 F, egg drop soup 170 F, pasta 141, seafood delight 150F. Discussion with operator about having large amounts of raw fish and meat out at one time during food preparation. Although meats,pork, were found at adequate temperature of 42 F foods should be covered and placed in walk in cooler once cut. If further preparation is needed they can be taken back out later. Should not have multiple cases of meat out in kitchen waiting to be cut. Screens on both back doors have been repaired since previous inspection.

Buffet temperatures macaroni and cheese 175F, vegetable mein fun 168 F Rice in cooker 169 F, Egg drop soup 175 F. Steamed clam 145 F. Small pile of cooked shrimp in shell are measured at 51-55 F shrimp are iced and covered. Operator states that shrimp are cooked then chilled 30 minutes to hour before placing on buffet. All food on buffet is in small qualities and food has fresh appearance.
