11/27/2012 | Inspection | Found was a refrigerated drawer with a torn and partially detached gasket causing the drawer to remain partially open allowing warm air to enter. Contents were just barely at optimum termperature, 44F was the recorded temperature for the pasta in this drawer.
Package of butter sauce base found open and spilling out over other boxes and containers in the storage room. Container of ice cream was stored open in the freezer.
Rinse water, mechanical dishwasher was not up to recommended temperature. Recorded temp was 140F, recommended 180F. This was corrected as the booster switch was not on. Once booster on, water temp climed to 180F. Suggested sign be placed on dishwasher to remind kitchen staff to turn on
booster.
