The Refrigeration units that were used to store foods all had thermometers inside and these read between 38 to 42 degrees F, with the exception of the Walk-In Cooler. The following TTCS food items were measured: Walk-In Cooler - Crab Rice Topping for Mahi-Mahi - 36.7 to 37.3, Spinach Artichoke Salad - 36.5. The Final Rinse Temperature for the Dish Washer was 171 degrees F. Report e-mailed. |
