10/09/2015InspectionThe dishwasher was working at the time of inspection, thermometers were calibrated and cooling and reheating techniques were reviewed. Soups were being reheated on the stove top, all refrigeration was operating properly and all temperatures were acceptable. The basement area where the walkin, ice machine and dry goods storage is is unfinished floors, walls and ceiling. If the facility is going to be renovated or sold this area must be completely finished.

Discussed keeping cooling logs and provided a log. Reviewed menu and discussed cooking temperatures. Observed leftover foods being reheated to above 165 deg. F.

Re-heat temperature, mashed potatoes = 171 deg. F. Re-heat all leftovers to 165 F or above. Please complete cooling log to show that food was cooled from 120 F to 70 F in two hours and from 70 F to 45 F in an additional 4 hours. E-mail cooling log to owner.
