06/23/2006Inspection5A - Sandwiches on display in the deli fridge were not stored at proper cold holding temperatures. The internal temperature of one of the sandwiches was measured at 53 degrees F. Corrective action: the sandwiches were moved to a colder refrigerator so that proper temperatures could be maintained. Thermometers in display refrigerators read 48 degrees F and 55 degrees F. 6A - The corn chowder soup stored in a crock pot for hot holding was not stored at proper hot holding temperatures. The soup was measured at 126 degrees F. Corrective action: the soup was reheated in a pot to 165 degrees F before being returned to the crock pot for hot holding at 140 degrees F.
