12/03/2015InspectionComments only: 1. Using a metal stem probe thermometer, multiple food items were recorded in the range from 45 to 47 degrees F inside the 3 door salad cooler. As precaution, management moved all food items that require refrigeration to a properly functioning cooler immediately. Do not place any foods in this cooler that require refrigeration until the cooler is serviced and is capable of cold holding all food items at or below 45 degrees F or less at all times. 2. In discussion with manager, Eric Bourgeois, leftover cooked prime rib is reheated the following day to an internal temperature of 135 degrees F, and hot held whole in warming unit. Provided education. Only individual requested servings of prime rib are allowed to be reheated to a temperature less than 165 degrees F. Reheating a large portion of prime rib at any temperature less than 165 degrees F and hot holding the meat is prohibited.
