Sometimes dinners are prepared for groups that rent the entire facility. While a cooling log was not present, the operator was fully aware of proper cooling procedures. Proper storage of foods was discussed with operator. |

A cooling log was provided and the facility operator was instructed the complete the log when cooling chicken breast. Discussed storage of raw meats and shell eggs in relation to ready to eat foods. Discussed cooking temperature for tomorrow nights meal - smoked pork ribs. The temperature of chicken breast held in the kitchen reach-in cooler was 38.6 deg. F. |
