03/05/2015 | Inspection | Proper glove use was observed. Cooling procedures were discussed. Minimal cooling is done at this operation, but a four inch or less uncovered ice bath method is used, good. The digital metal stem probe thermometer onsite is accurate. The required choking poster and CPR station are posted. Owner was very appreciative of time taken to educate regarding testing of sanitizers and proper storage of foods in coolers. |
