07/18/2014 | Inspection | Potentially hazardous foods which include American cheese, lunch meat, sliced tomatoes, and milk, must be cold held at a temperature of 45 deg. F or below during cold holding (which includes storage in a cooler) unless the use of ""Time as a Public Health Control"" is implemented. A TPHC fact sheet was provided to the feeding site staff at the time of inspection. Additionally satellite feeding site staff must have a suitable food probe thermometer that is capable of measuring the temperature of thin foods (a digital food probe thermometer), and it must be used to monitor food temperatures during cold holding. Please contact the Saranac Lake District Office if you would like to discuss the use of Time as a Public Health Control. |
