--The firm has obtained additional cutting blocks for both the bain maries but is failing to rotate them as indicated by deep discolored knife score marks on only single side.

--There is a build up of brown congealed oil on the exterior of the baffles on the exhaust hood. There is a build up of spilled food material, congealed oil non food material on the rear perimeter of the wall under the hot side of the kitchen. Both the microwaves show old product build up on the interior.

--Various Food in the basement walk in cooler stored open with no covering. The condensate line from the blower in the walk in cooler is clogged or two fan Bohn unit is nonfunctional with condensate being collected in grey and black bus tubs under the unit with open food product under the tubs and adjacent to the collection tubs.
