    Black mildew-like buildup along caulk line at rear backsplashes of both mechanical dishwashers.

    Handwash signs missing at handsink in lower kitchen and employee restroom.

    1 dead mouse caught on glueboard observed behind grill line in lower kitchen. No droppings observed elsewhere in facility. Person in charge was not sure of where mice may be entering. Sanitarian will return for a follow-up inspection.

    Test strips to monitor chlorine and quat sanitizer concentrations were not readily available. Chef is 2 days on the job and was not sure where strips might be located but will make sure they are obtained within 10 days.
