-Plates in cold holding unit in kitchen stored improperly causing debris on top. Sanitarian instructed management to remove and sanitize plates and place them face down when storing to protect from contamination.

There is no individual present with City of Philadelpia Food Safety Certificate. PIC has expired course certificate. Manager's son has current course certificate and is in the process of getting City Cert. Documenation provided.
- Duty of Food Employees to Wash (46.132)
Food employee did not follow proper hand wash procedures. Soap not available at hand wash sink in kitchen prep area while food preparation was being conducted. INSTRUCTED MANAGEMENT TO TAKE IMMEDIATE CORRECTIVE ACTION.
